Sulforaphane

Sulforaphane is a compound commonly found in cruciferous vegetables such as broccoli, brussels sprouts, and cabbage. Numerous studies have demonstrated that sulforaphane provides strong health benefits. It is produced when the enzyme myrosinase transforms glucoraphanin, a glucosinolate, into sulforaphane upon damage to the plant, which allows the two compounds to mix and react.

Sulforaphane: A Most Miraculous Molecule

Austin “Brud” Hodgkins returns to the program for a fascinating conversation about sulforaphane (SFN) and an innovative effort to bring the nutritional power of broccoli microgreens into school lunches.

Brud and his team at Indoor Organic Gardens of Poughkeepsie have launched a school nutrition pilot program using BrRad microgreens powder, designed to provide children with the nutritional equivalent of five heads of broccoli through a total of just one teaspoon of powder, divided over three days each week.

​

The conversation explores the goals of the program as well as the science behind it—beginning with what sulforaphane actually is.

Sulforaphane is a bioactive molecule produced from the glucosinolate glucoraphanin through the action of the enzyme myrosinase. That conversion process is important not only when eating broccoli and broccoli microgreens, but also when evaluating sulforaphane supplements.

In response to a viewer question, Rebecca and Brud discuss why many supplements marketed around sulforaphane may miss the mark. Glucoraphanin content alone does not necessarily tell us how much active sulforaphane will ultimately be produced and absorbed; myrosinase activity, processing, formulation, conversion, and bioavailability all matter.

The program also touches on exciting recent research into sulforaphane and the brain, including its potential roles in Nrf2 activation, antioxidant defense, neuroinflammation, neuronal protection, and neurogenesis.

From understanding the chemistry of broccoli to choosing an effective source of sulforaphane—and ultimately finding practical ways to bring concentrated cruciferous nutrition to schoolchildren—this program explores why sulforaphane truly deserves attention as a most miraculous molecule.
